SEASONAL CHINESE COOKERY
Using seasonal ingredients have always been part and parcel of the practical Chinese diet and cookery. In these lessons, we explore new recipes each week using the freshest ingredients from the markets and saute, stir-fry, steam and braise our way to delicious Sichuanese, Cantonese and local Shanghainese dishes.
Chef Wang, Shanghai's cooking instructor, was born in Xinjiang province and raised in Shanghai. Working in professional kitchens for 17 years, Wang brings a wealth of experience of exciting gourmet restaurant cooking to the home kitchen.
Class Format
The cooking class session progresses from lecture to chef's demonstration to individual hands-on execution of the day's menu. There will be a 2 dish instructor cooking demonstration followed by the student's hands-on cooking session.
Menu
We prepare a two dish menu featuring regional specialties of the Jiangnan (Shanghai, Zhejiang, Jiangsu) region.
Kitchen Studio
The cooking school (pictured below) is a lofty space tucked in a peaceful residence lane in Shanghai's leafy French Concession quarter.
